Supreme Beef Chili

1 pound beef
1/4 cup black beans, soak over night
2/3 cup kidney beans, soak over night
1/2 small onion, chopped
3 cloves fresh garlic, minced
1 cup bone broth
2/3 c. carrot, chopped
2/3 c. celery stick, chopped
2/3 c green zucchini, chopped
2 tsp salt
1 tbsp cumin
1 tbsp chili powder
1 tsp coriander
pinch black pepper
1 tsp oregano
1 tsp thyme
1 tsp basil
1 bay leaf
3 tbsp organic tomato paste
1 c marinara sauce
2 vine ripe tomatoes, chopped
1 large handful finely finely finely minced kale
cilantro-optional, to top


In a medium sauce pan put your soaked beans in water to cover and simmer 1 hour. Drain when soft.
In your dutch oven or large sauce pan add 2 tbps ghee or coconut oil. Sauté the onion, garlic, carrots, celery, zucchini until veggies are soft. Add in and all spices. You may need to add some extra ghee to the pan.
Make a well and add the ground beef until cooked through. Add the tomato sauce, paste and broth. Simmer for 45 min. Add the minced kale and chopped tomatoes and simmer for 10 more minutes or until all flavors are blended.
